Watermelon Tuna Poke
Watermelon poke tuna was originally something I wanted to try because I was intrigued. I am not vegan, vegetarian, allergic to fish, etc. But come on… can watermelon ever disguise as poke tuna? I am here to tell you… YES! Obviously anytime we go on the internet, there will always be skeptics, but please don’t knock it till you try it!
I developed this recipe because I was going to a vegan party and thought this would be fun, unique, and different! After making it once, I have been asked to make it again that same week… and here I am trying to share it with you!
Take a rip watermelon and cut it up into the bite size pieces you normally do for poke. I like to put it in a colander to strain out the juice to have as a refreshing beverage.
Salt the watermelon. This will help get all the excess water out of the poke. Place all of the watermelon on a baking sheet.
Place the watermelon into the oven at 200 degrees F for around 2-3 hours (or more if you want!). The longer you wait, the less crunch comes with the bite to resemble tuna.
Add the tuna to an airtight container. To it add the following:
Sesame Oil - you’ll want to add a lot and add this first. Make sure that the tuna is fully drenched in it. If youre using 1/2 a watermelon add about a 1/8 - 1/4 cup
Rice Vinegar - I add about 2 tablespoons
Soy Sauce - I add about 1/8 a cup
Chilli Pepper - Add to your desired taste
Chives / Green onions
Sesame Seeds
Store this in the fridge for 24 hours. Highly recommend waiting the full time because it gets all the flavor absorbed and helps the texture! You can make hand rolls, poke, or sushi with these! Use it any way that you would normal poke tuna. Enjoy!
